Two weeks ago I was walking along the beach cliffs in Sydney, Australia. Today I’m freezing my bum off at home in Chicago. I can suffer through another winter here by dwelling on my fond memories of the perfect weather there.
‘Tis the season for hot soup on a cold, rainy day. Here’s one of my favorite quick and easy soup recipes:
Creamy Chicken and Wild Rice Soup
2 T. butter
1 T. flour
1 medium onion, diced
2-3 ribs of celery, diced
3-4 large carrots, peeled and sliced into 1/4” rounds
6 cups chicken broth
3 cups cooked chicken (I always use rotisserie chicken)
1 box long grain wild rice w/ spice packet
1 1/2 cups half and half
salt & pepper
In a large pot, melt butter over medium heat. Saute onions, carrots, and celery until softened, about 5-7 minutes. Add flour and stir to combine. Season with salt and pepper.
Pour chicken broth in and raise temperature to med-high high; bring to a boil and add rice and seasoning packet. Cover and reduce heat to simmer for 20 minutes, stirring occasionally.
Add chicken and half and half. Cook 5 minutes more. Serve and enjoy! Serves 6.
I like to serve this with homemade rolls. It tastes even better when reheated the next day.

End Of An Era of the Day: After over 30 years and 15 studio albums, the legendary rock band R.E.M. has called it quits.

R.E.M. songs defined my teenage years, and each time I hear one of my favorites I’m transported to the past: road trips with my family with the Out Of Time album playing on my portable CD player in the back of the car, listening to “Everybody Hurts” and feeling every lyric during a particularly difficult life experience, and sitting 20 rows back at the only R.E.M concert I was ever able to attend.
Thanks for everything, gentlemen.

It’s not everyday that you see the name of a girl you knew in high school, and who came to your wedding, listed in an article about a drug-dealing professor on the run. Poor Holly! It’s been awhile since we’ve been in touch, but that’s not the girl I remember.
Breaking Bad IRL of the Day: With a pinch of Sons of Anarchy thrown in for good measure: Stephen J. Kinzey, a professor of kinesiology at Cal State San Bernardino, is on the run from the law after a raid on his Highland home yielded “more than a pound of methamphetamine, rifles, handguns, body armor, leather biker vests and other biker paraphernalia.”
The cops suspect the 43-year-old of leading the local chapter of the Devils Diciples Outlaw motorcycle gang, while running a successful meth operation on the side.
His live-in girlfriend and alleged business partner, Holly V. Robinson, was arrested during the raid on suspicion of distributing methamphetamine. Several other suspected drug ring members were arrested as well.
“To have an associate professor who is a member of the Devils Disciples and allegedly dealing methamphetamine is quite alarming,” said Sheriff Rod Hoops at a press conference. “I mean, it’s unusual to say the least.”
“It’s unusual” is literally the least you could say about this case, particularly after perusing the professor’s Twitter feed, which contains, among other mundane tweets, the line “sometimes the best of plans can be ruined by a cuddling cat.”

My husband encouraged me to read this book a few years ago and I really enjoyed it. This is one sports movie he won’t have to drag me to see. :)
What amuses me most about this ridiculous piece of legislation is that the people most likely to keep/cook/use roadkill probably were already doing so before it was ever legally allowed.
